Liz's moist, traditional Christmas cakes are filled with carefully selected dried fruits and drenched with rum. This recipe has been a favourite, not only for Christmas cakes but wedding and other special occasion cakes. The recipe came from a friend of Liz's who gave her the best Christmas cake they had ever tasted!
Liz's beetroot chutney adventure began due to a local over supply, a trusted recipe which she tweaked, locally grown onions and grandchildren wanting to pick beetroot! Beetroot is commercially grown in the fertile Felton and Pilton Valleys south of Toowoomba and sometimes there is an oversupply for the market and this is how her beetroot chutney started.
